I hope everyone has an excellent holiday weekend, and get to spend time doing something fun with the family. We will be spending the holiday weekend working a table at a gun show. Now that the primary is over, and it’s officially election season, that means frequent appearances at places gun owners frequent, in an attempt to recruit volunteers for NRA endorsed candidates for November, and get the word out.
But this weekend I can’t help but feel like I need to BBQ some a piece of meat. But what piece of meat? Brisket requires me to lose sleep. Just did a pork butt a few weeks ago, so I’m pork butted out. Pork back ribs maybe? I like ribs, but I plan to make some ribs for my father in a few weeks. I like smoking fish, chicken, and sausage too, but it’s so easy it’s almost like grilling. If anyone has suggestions for a great meat to smoke that presents a bit of a challenge, but won’t keep me up, I’m all ears.
Have you considered smoking a flank steak? They are delicious. the difficulty lies in not over cooking it and causing it to dry out.
I usually do mine with a rub of salt, pepper, and garlic. Smoke with mesquite until delicious.
I think I smoked my last one for 5-6 hours and everyone loved it.
Beef ribs. Or lamb. Or decent venison, but I’ve never smoked it so I’d be worried about drying it out. And when I say decent, I mean a deer that spent most of life eating baited corn in fields instead of stripping what leaves it could reach off various trees.
Try a mess of Cornish Game Hens.

I like the flank steak idea too. I will have to read about how to do it. Can you offer any pointers?
I kept the barbecue at about 225, added chunks of mesquite once an hour or so. Sliced it thin on the biased once cooked, like you would a grilled flank steak.
I also did a rub using cuman, chili powder, salt, pepper, garlic, and cayenne. It was much more southwest tasting. I enjoyed it. the wife, not so much.
Game hens do sound good though. I might have to pick a couple up.
I like the idea of cornish hens. I don’t think we’ve had cornish hens since I made them for us in DC.
Ummm… Stayin’ dry. In a flashback to my running Mike Royko on Veterans Day, I’m working Monday. Still haven’t quite adjusted to getting up at oh-dark-stupid, so will probably have a brat and a salad, and go to bed…
